
Today we will be making every KLite’s favourite noodle dish – the Dry Chilli Pan Mee. So what is the Dry Chilli Pan Mee? This noodle dish consists of flat noodles tossed in a spicy umami sauce and topped with chicken, mushrooms and crispy anchovies. It is spicy yet savoury – one bite and you will know why this dish is every KLite’s fav.

Ingredients
Pan Mee
1 Dry Chilli Pan Mee Meal Kit 4 Pax
Crispy anchovies
1/2 cup vegetable oil
1/2 cup dried anchovies
Mushroom and chicken
4 fresh shitake mushroom
135g of chicken breast
1 tbsp oyster sauce
3 tbsp soy sauce
3 tbsp dark sweet soy sauce
Salt (add to taste)
1/2 tsp white pepper
Steps to prepare each ingredient

1. For crispy anchovies:
a) Heat the oil in a small frying pan over low heat (anchovies get burned easily).
b) Next, add the dried anchovies and cook for 2-3 minutes or until they are crispy.
c) After that, lay them to rest on a paper towel to remove excess oil.

2. For mushroom and chicken:
a) Soak your fresh shitake mushroom for 10 minutes
b) Next, squeeze your shitake mushrooms to remove excess water. After that, cut the mushrooms into thick slices. Set them aside for cooking later.
c) After that, heat some vegetable oil in a frying pan or wok over high heat. Add the chicken and stir-fry until almost cooked. Then add the mushrooms and stir fry for a few minutes.
d) Then add in the oyster sauce, soy sauce, dark sweet soy sauce, pepper and salt. Stir-fry until everything is properly mixed together. Add 1/2 cup of water and allow to simmer for 5 minutes.
e) Following this, add in a pinch of sugar and chicken stock while the sauce of the mushroom and chicken turns thick and glossy.
f) Finally, turn the heat off and stir through the sesame oil and pepper which is added at this stage.
3. For pan mee:
a) To start off, just take out 1 cake/unit of pan mee from Dry Chilli Pan Mee Meal Kit 4 Pax
b) Next, cook it for 7 minutes in boiling water. Then drain the water and set aside.
c) As for the chilli paste and oil. It is included in the packet – no need to make it from scratch!
* Just to give you a rough idea on how much of a hassle it is to make the chilli paste – you need ¼ cup dried shrimp, 20 large dried red chillies, 5 garlic cloves and many more for the paste. Not to mention, you also need to use a food processor/blender to make it on top of cooking it for 30 minutes or until the mixture has a jam-like texture. 4. For the finishing touches:
a) Put the noodles in a bowl.
b) Next, top with the chicken and mushroom. Add in a small handful of crispy anchovies and serve with the chilli paste and oil included in the package. Mix everything well in the bowl and voila! You are ready to eat.
